BAKED GOODS

Mediterranean breadsticks

Ingredients:

350g strong flour
200ml warm mineral water
50ml mild olive oil
8g anchovy powder VEGENAT
3g dry baker’s yeast

Preparation:

1. Dissolve the anchovy powder in previously heated water and reserve.
2. Sift the flour together yeast in a bowl.
3. Make in the center a crater and incorporate the liquid elements water and oil and knead until obtaining an elastic and flexible mass.
4. On the work table sprinkle a little flour and knead again.
5. Make cylinders that will be cut to desired size and finally make the form as you wish (sticks or doughnuts).
6. Let the dough rest while oven is preheated to 200 ºC in up/ down heat.
7. Bake for 20 min approx. until the breadsticks are of a soft golden color.
8. Let cool in a dry place over a rack before consuming.

Sailor hardtacks

Ingredients:

400g strong flour
100ml mineral water
50ml EVOO
10g anchovy powder VEGENAT
10ml blossom honey
10g black sesame
6g dry baker’s yeast

Preparation:

1. Sift the flour together with the yeast on the work table directly.
2. Dissolve the anchovy powder in the water and let it rest for 10 min.
3. Make in the middle of the flour a crater and add inside it rest ingredients.
4. Knead until you obtain a flexible and uniform mixture without lumps.
5. Make a ball with the dough and let it rest while the oven is preheated to 180ºC.
6. Roll out the dough with a rolling pin, giving it about 1 cm thick.
7. With the help of a pasta cutter or a knife make squares of the desired size.
8. Bake for 20 min approx. After turning off the oven, leave hardtacks between 3 or 5 min. with the oven door open.
9. Let stand on a rack until cool before consuming.
